My family and I have always felt a need for a hearty homespun breakfast that can reheat quickly enough for even the busiest of mornings, so one day, my mom decided to lay leftover tater tots in the bottom of a big sheet pan, followed by some sausage links and an entire carton of eggs. She baked it at 350 for 35 minutes, and then cut it into 12 squares and packed them away with some paper plates and plastic wrap. One batch would last us the whole week! Breakfast Casserole has become a staple in our house, and I'm honored to share our little utilitarian tradition with the world.
