This is a traditional recipe from the Amatricia region of Italy, which was written down for me by my partner, Antonella Caputo. We have adapted it slightly to use non-local ingredients you can find in most food stores. The cartoon figure in the artwork is actually our friend Clementina, who comes from that region and is a fabulous cook.
