Since I've been on gluten-free diet, I'm looking for good recipes especially for baking. I have always backed a lot and now I'm trying to find up it how to prepare a good bread / cake / desserts without normally, gluten flour. It hasn't to be complicated or to taste... you know. ;) So I decided to collect all my recipes I tried till now and found it good. Here is the first one, enjoy!
This is a recipe that my Mom makes all the time. The ingredients are always in her pantry and this moist cake requires no eggs. It's super easy to make and really quick, especially when she gets the urge for cake on Sunday afternoon!

Hence the Nothing to Bake No Bake Cookies. It was always such an easy solution to late night movie nights and times when we needed a little comfort! No Bake Cookies is a hug for a foodie like myself. Recipe for "Limburgse Koekjeskoek", originates from the most southern province of The Netherlands (Limburg). Funny translated as Koekjeskoek, but correctly translated as a cake of biscuits. Drawn with mixed media (colorpencils, copic markers, ecoline and fineliners).
