Growing up in the Netherlands we ate many traditional “mash-up” meals, but this recipe is one that ticks all the happy boxes for me! Translated to English it means “Farmer’s cabbage” or as one of my nieces says “Kale Mash”. A warm comfort on a chilly day while thinking about the beautiful Dutch countryside that I miss.
The word 'Summer' always brings a smile on my face and reminds me of all the beautiful colors that look particularly brighter in this season. I came across this recipe of 'Rainbow Salad' on Instagram by Nandita Iyer, the author of 'The everyday healthy Vegetarian'. Rainbow Salad- The name was so apt, because this is exactly a big bowl of colors. Apart from being so nutritious, all the colors are extremely appealing to the eyes. When I saw the topic of Summer Salads, I immediately remembered Nandita's Salad. The salad is extremely customizable to what you have available in the kitchen and is super easy to make.
My favorite thing about summer is the farmers market - where I also worked for 10 years of my life. Fresh produce, lively faces, and a gathering spot. This roasted veggie salad recipe features my favorite farm fresh ingredients! Roast with olive oil and seasoning: beats, garlic, peppers, and carrots. Toss together fresh kale and radishes, top with the roasted veggies, olive oil, and seasoning!
