I love things that are really seasonal. You have to wait until their time has come and then savor them while they last. One of those things are elderflowers. Right now on every walk I inspect the elder trees I pass to see how much longer I have to wait until the blossoms are open. I love their smell and aroma and I love the direct connection to the world around me, that gives so graciously. One of the first things I am going to make is an elderflower cordial. It is super refreshing and a wonderful treat of late spring that all of us love.
If I have to pick a flower to eat, it will have to be the Elderflower! For me there’s no flavour that represents Spring more than the one from a good Elderflower cordial - the sweet flavour with the freshness of the lemon is a combination made in heaven! This cake is my all favourite cake (and was also the one chose by Harry and Meghan for their wedding ;) ). Enjoy!

(This illustrated recipe was my class project from Ohn Mar Win's Skillshare class. It is my first illustrated recipe and the first time I have used Adobe Illustrator. So fun!)
We have lots of elderflowers here in the Summer. A couple of years ago my German friend Birgitt showed me how to make this delicious jelly with elderflowers we gathered from the forest and my garden. Its perfect on toast, and very tasty with cheese !
