My submission for Farmer's Market. Is't all about eating fresh, seasonal products. Now it's great time for all types of desserts with rhubarb. The Farmer's markets in Europe all full of this tasty stalks now. Here in a recipe with a coconut crumble (thanks to coconut flour) - fits perfect together.
One of my favorite summer fruit recipes! We'd travel up to Grandma's for her birthday and pick some fresh rhubarb to take home and bake with. Typically the regular rhubarb pie is a bit too tart on its own, so we usually add strawberries to sweeten it out.
Everything I love about summer in a quick and easy breakfast. If you have the jam prepared beforehand, it's just a matter of slicing up some polenta and frying it in a pan. And, of course, slathering with (a dab?) of butter and a (healthy) dose of maple syrup. Topped with fresh strawberries and chia jam, it's as close to perfection as an early summer morning can get.
