When we pick out a movie, put on our pajamas and cuddle along with the dog (and cat) on our couch, well, life doesn't get much better! Here's another favorite easy-quick-fix family recipe. And while we're confessing about indulgences: sometimes instead of a 4 oz can we'll put in a whole 8 oz can of roasted chilies! We serve this in large mugs with handles for easy eating during the movie.
Whenever my family has something to celebrate this recipe is part of the joy! For our family members who like extra lemon flavor we'll have slices of fresh lemon on the table to be squeezed over the steaming hot pasta with lemon sauce. Why the dog illustration? Well, I've met a Border Terrier named "Happy" and he's a nice visual metaphor for my feeling of delight at putting this pasta with lemon sauce on our table with a nice bottle of red wine!
Fortified with the goodness of spinach and cream! This is a quick one, and one that my toddler thankfully loves. Fun fact: did you know that for decades, spinach enjoyed a rather exalted status thanks to a transcribing mistake by a German chemist named Erich von Wolf? He mistakenly noted spinach as having 35mg of iron per 100 gram serving, instead of 3.5 milligrams. It was seventy years until it was corrected!
This is magic one because it made my hubby actually looking forward to eat tones of veggies (instead of thinking about this as a punishment ;). Whole concept is loosely based on Jam type of Thai salads which was I ate most often when we stay there(6 month all together) and I missed dearly so I just start making those at home. One day I run out of eye bird chili but I had can of chipotle in my fridge which gave it a bit of Mexican twist. For sure this is not your authentic Thai meal but just the way I cook at home. Sometimes I use glass noodles, sometimes rice tagliatelle and sometimes quinoa (or just veggies). If I don't have palm sugar I use anything sweet from date syrup to plain white sugar (come one! it's just a little spoon). It will work with nearly any veggies and fruits - just think a mixture of crunchy, soft, creamy, tangy, salty, spicy a bit sweet goodness. One thing important is to heat up the dressing and then mix all the ingredients in a same, still hot pot, to make salad not really cooked or anything but also not fridge-cold. We eat it crazy spicy but it will be ok mild. Have fun!
