I wanted to commemmorate my youngest daughter's very first solo baking venture. She arranged them on that pretty cake stand and wrote a formal invitation to her dad (who was in his office about ten yards away) to come to the "amazing tearoom"!
I made this so many times that my husband started to complain. Guests, on the other hand, would lose all sense of restraint when I would ask if they'd like a bit more. It's great fun to make but I will save it for people who appreciate it in future. It's light, lemony, impressive and tastes divine.
The Aunty Ro in the picture is my alter ego - it's how I will be in about twenty years (ok, fifteen). The recipe is my own and is always demolished within a few minutes, and the figs somehow grow in my garden, which defies all the laws of nature, as anyone who has visited Galway will testify.
