When in the cold season, thick soup is my all-time favorite. I use this recipe a lot as it’s easy to make and this pumpkin soup has sweetcorn in it, which feels more filling and its taste matches better with pumpkin.
Also for my husband who doesn’t find soup as a whole meal, it can’t fill him. Hence, I like to serve freshly baked dinner rolls as a side and he can eat as many as he wants.
This is one of my favourite go to vegetarian dinners. Roasted Cauliflower, Butter beans and Paneer.
I have adapted the original recipe a little bit. But the two key ingredients are always Tikka Masala Paste and Coconut Cream/Milk.
The rest of the ingredients are Pumpkin, Carrots, Sweet Potato, Spinach, Lemon and Naan Bread.
A quick and easy soup to warm our heart. My mama always make sweet beans soup since we were still kids. This is her recipe after adding more and more ingredients throughout the years. I asked her why adding so much in one pot, she says "add whatever beans you feel like eating and it will be yummy"
My grandmother was born in Rivarolo Mantovano, a small village in the countryside near Mantua. When I was a kid, we used to go there (from Milan) to pick up pumpkins, in order to find the most delicious for our homemade tortelli.
Pumpkin-filled tortelli are a very ancient recipe from northern Italy, and a typical dinner for Christmas Eve in my family. My grandfather makes egg pasta on Christmas Eve morning or the day before. The filling, a mixture of pumpkin, amaretti biscuits, parmigiano cheese, mostarda, and nutmeg, is rather sweet than savory. We have them with butter and sage, but my father usually grills them in the oven with parmigiano on top, for some extra-flavour.
