This is a recipe that came about through experimentation for blueberry coconut pancakes. I am an avid pancake-creator-and-eater, and always enjoy trying different recipes and combinations of tastes while still trying to use healthier ingredients. Through this, I once combined coconut flakes with blueberries and oat flour. And instead of sugary maple syrup, I made the sweet topping through a Greek yogurt and fresh blueberry basis. It was a happy success that I enjoy making often.
