No summer is complete without an evening at a local Greek Festival. As a teenager I worked my fair share. My favorite foods are nearly anything I can get my hands on from lamb and gyros to pastries, pastries, pastries. My grandmother read Greek coffee grounds. While standing over a hot grill where shish kabob sizzled and hissed my dad barked "Souvlakia! Souvlakia! Souvlakia!"
For this delish dish, we bought the herbs from our local farmers market. This year, the shopping experience at the market is different. All shoppers and vendors are required to wear masks. Shoppers can't touch the produce and must maintain 6' distance from one another. The first hour of shopping is restricted to the elderly population and those with health issues. Despite the experience, the produce tasted and looked good as usual.
