Lotek is a traditional Indonesian dish consisting of fresh vegetable salad dressed with peanut sauce. A mixture of vegetables such as cabbage, bean sprouts, long beans, and tofu are soaked in a thick peanut sauce made from ingredients such as peanuts, chili, palm sugar, and tamarind water. This dish is often served with additional crackers as a topping.
