This Fruit Salad recipe is quite tasty, and easy to make. Best of all, eating fruits from all colors of the rainbow will provide you with healthy antioxidants as well as a variety of vitamins and minerals and fiber to help keep you healthy. This recipe was inspired by Design Challenge 1: Eat the Rainbow as well as the many fruit salads that my father made for us when we were younger, and those we make regularly today.
A salad that makes eating the rainbow easier. A delicious and easy to make salad made from chickpeas, lettuce, cucumber, tomatoes, spring onions, spices and herbs with a tangy lemon and olive oil dressing, that is delicious with warm pitta breads.
This is my entry for the first 'handpicked' design challenge, in response to Eat the Rainbow. I genuinely eat this rainbow salad nearly every day for lunch - the amount of colours I get to experience makes the preparation a joy! I've recently actually made time to enjoy making lunch, as opposed to a quick grab and go that I'll eat in 5mins, so this is actually quite special to me :) It's all painted in gouache and then composed in Photoshop, along with a rainbow pattern I made just for this.
Lotis or also famously known as Rujak Buah is an Indonesian version of fruit salad. Chopped tropical fruits combined with palm sugar dip seasoned with chillis, peanuts, shrimp paste and salt. Even more delicious with a hint of sour tamarind taste. Refreshing tropical style rainbow of healthy snack!
