Borscht is a simple is a Ukrainian/Russian beet soup typically made with beef broth. Although this is a vegetarian version with the beans as an excellent source of protein. This is definitely a traditional hearty yet vibrant soup and worth trying out when the weather turns cooler
I'm submitting this recipe as part of a Folio Focus brief from Natalie Williamson of Rise, Design, and Shine. It's for my absolute favorite summer soup - a family recipe that is made in some form by Lithuanians the world over :) The best part about this soup - besides its scrumptiousness - is that using fresh beets gives it a gorgeous hot pink color.
My go-to 'feel good food' for autumn when the beetroots are plenty and the cooking apples are abundant. A simple recipe to make for now or keeps well for a few days' time. Filling and healthy and low in calories. Best of all is when I mix the beetroot with the dressing and it turns to bright lipstick pink - it's an attention grabber!
