A rendition of a recipe my mom gave me freshman year of college: It was originally just artichoke dip, but I have an extreme passion for spinach dip, so I forced them to combine to be one delicious, dip-filled, cheese dream.

I love artichokes in any form... but this is one of their best spring incarnations! Something about the combination of mint, garlic and parsley that makes them sing. Best at room temperature.
