I came across strawberry risotto during lockdown and it seemed so improbable I had to try it. It was a different way to use up a glut of strawberries. I used Martini as I had a bottle open but white wine would also work. It is a savoury dish (honestly) and a very pleasing shade of pink.
Arborio rice has been easier for us to acquire during this time of quarantine versus white rice and/or brown rice. Because of this, we learned how to make Chicken Risotto! It was surprisingly simple with loads of patience and stirring endurance.
