This easy miso soup recipe can be done with just a few ingredients from the pantry (or fridge): dashi powder, miso paste, dried kelp. Great, but totally optional, addition, is soft tofu, cut into small cubes! Boil some water, add the rest of the ingredients and simmer a few minutes, and voila! Comfort in a bowl.

Quarantine Pantry Craving. Tuscan tomato sauce is one of our family's favorite the ingredients are easy to find and can be served with any type of pasta. We love it with spaghetti. I like to make a large batch and freeze it. While the sauce is simmering to thicken, the family gathers in the kitchen, and everybody wants to dip a piece of bread in the sauce to "test" if it is ready. If you are lucky to find Parmigiano Reggiano, of course, add on top!
My ideal pantry has bottled pickles and jams, various shapes of pasta, colorful beans and grains, onions and garlics, dried herbs and so on.
It's fun just watching the lineup of excellent foods that you can eat right away and thinking about what to cook!

This is a recipe that I made during being quarantined. I was trying not to go to the grocery store and also trying to impress my children with a playful but delicious rice dish. The juice from the beets makes the rice a super vibrant magenta pink color. I felt like an awesome mom because I made a fun meal that the kids actually ate.
