One of my very favorite childhood memories is my grandmother’s palacinkes, a crepe like pancake rolled with stewed fruit or jam, sprinkles with powdered sugar &/ or sour cream. HEAVEN ON EARTH! Since then, I’ve come to learn that almost every county/culture has their own special version of a pancake, & I’ve yet to meet one I didn’t like!

These lazy mornings would start off with careful measuring of ingredients and usually end with batter covering my mom’s normally immaculate kitchen countertops. The end result was always worth it though: sweet, sticky, syrup-covered pancakes. But the best of the best Sundays were the ones after my mom and I would go blueberry picking. Fresh blueberries in fluffy, golden pancakes were (and still are) the best way to wake up on a Sunday.
