I absolutely love eggs, and am fortunate to have a local farm where I can get fresh, free-range eggs weekly. At least once a week I treat myself to a toasted everything bagel with a little cream cheese, a slice of avocado, two fried eggs, and a dash of hot sauce. It really is the perfect breakfast.
Having bagels on Sunday has always been a ritual in my family for as long as I can remember. My dad would pick up bagels at our local shop. He always reads the newspaper while enjoying his bagel. As our family grows and expands, we've added more toppings and fixings when we get together for Sunday brunch, but the ritual always feels the same to me.
In our 20s, my sister and I used to do a lot of long distance bike camping, and our go-to cooking method amounted to “wrap it up in tin foil and throw it in the fire!” This breakfast my sis invented is GENIUS. Multigrain bagel for fibre, apple for ... fibre as well, I suppose, and chocolate caramel for fun!
