Aside from being absolutely delicious, this is also the perfect grab & go breakfast or snack. In these hot summer months I try to avoid using the oven as much as possible so I make a big batch on Sunday night and store them in the fridge or freezer to use all week long! It helps keep me cool in the kitchen and the family can take them to school or work and I don't mind a bit since they're a healthy alternative to packaged snacks.
