I love activities, cycling, kayaking, running & motorcycling, I love nature! and I love to play hard, and that takes a lot of energy!! The best “fuel” for your body is fresh, whole foods...nuts, fruit, veggies....lots of colour in, means lots of energy out. Feed yourself well, and enjoy all that life has to offer! I just thought it would be fun to present a landscape as food, broccoli forests, asparagus trees & almond, pistachio stones by the blueberry rapids in the river! better than “Big Rock Candy Mountain’.
I used to be an Art Director and Designer for Whole Foods Market, and there was a period of time when we heavily promoted the idea of "eating a rainbow!" I always loved the idea of it, actually eating so many beautiful colors, plus it always made me chuckle to imagine literally eating a giant rainbow. So this was fun to bring to illustrated fruition (pun intended)!
This is one of our family’s favorite dinner meals. Especially the kids love it.
Cut the ham and onion into little dices and cook them in a about a tsp of butter until the onion is almost cooked through. Add cream and spices and let the sauce simmer until it starts to thicken. Cheese lovers can add freshly grated Parmesan cheese to the sauce - we sometimes do this when we’re feeling cheesy. While the sauce is simmering, take the broccoli apart, clean it and cook it for a few minutes. Drain it and set aside. It’s time to add the Tortellini to the sauce - please allow them to heat up. Now add the broccoli and stir gently. Enjoy!
