Tommy and I were dating when I was 14. My fondest memory associated with this time is visiting his Italian mom. Their home always smelled from something delicious like; garlic, tomato sauce, soups, and espresso. One day, I decided to make minestrone! Back then, I didn't know very much about cooking. The next time we visited her I proudly announced that I made minestrone! Smiling, she asked me how I made it. I naively said, “From a can!” Her smile dropped and she didn’t say a word. Ouch! If only she could see this recipe and try a bowl, I'm sure that she would be molto felice (very happy).
Who needs chocolate cake for birthdays when you can do something fun? The Italians already invented the greatest food ever made, Lasagna! It sort of looks like a cake, so why not make that instead? Sure it doesn't seem that impressive, but it's exploding with more flavor than that bland chocolate cake that your' mother always made you when you were younger. Not to mention, you can now throw a more cultural Italian style birthday party that every pasta lover in your' family will adore.
On cold winter days when I don't find much motivation to move to cook something I stick to an easy (and delicious) tomato soup recipe ! Delicious and great for motivation to keep on working through the chilly days of winter.
Fresh and bright, tabbouleh is the perfect dish to bring to a party! It's vegan, it's healthy and most of all it is delicious! This is a family recipe from my lovely friend Lena, you'll notice it doesn't include onions like many tabbouleh recipes and instead has fresh mint. I love it!
