Yihaa! Summer is just around the corner. The perfect time for a great picnic, and what better to take with you than the perfect salad?
I usually go to National Park Hoge Veluwe for a picnic, and I love the evening sun and spotting the wild animals like red deer and those supercute roe deer.
Here's one of my favorite summer recipes. It usually takes me just about 20 minutes to make and pack this spicy noodle salad. The chicken marinade is SO easy and simple but tastes so good!
This is a really simple and quick tsukemono, or Japanese-style pickle. The technique of salting then squeezing out moisture is common for Japanese quick pickling, and works with almost any vegetable. This recipe can be jazzed up with the addition of juliened carrots, lemon zest, blanched napa cabbage, and for the adventurous eater, minced octopus.
