This is a cake to celebrate the Mikael Agricola Day every 9th of April. Mikael Agricola is the Father of the Finnish written language. He wrote the first Finnish book in 1543. Before that, there was no written Finnish language. This recipe is an 80 centimetres wide illustration.
This rich-but-zesty snack has no refined sugar - it's sweet enough to be dessert, but also a perfectly acceptable breakfast choice, if you're into that kind of thing (I know I am!). Pair with coffee or tea and some fresh fruit, or enjoy all by itself, straight out of the pan.
Boo the Cat loves to "cook" -- or at least to climb on the counter while others do the cooking. A few special ingredients make these cookies naturally black in color, just like Boo! And with a few substitutions, this recipe can be completely vegan-friendly.
