I love love love sweet potatoes and this is an awesome way to mix it up for the holidays!

A lovely, sweet and comforting dish for those cold winter nights! The natural sweetness of the carrots, apples and honey enhance the flavour of the pork mince so the longer you fry for, the sweeter it will be. ENJOY! x

Here is a great twist on a traditional side dish that can probably be found on every Christmas dinner table this year. We know that sweet potatoes are a definite must-have according to our mom and we hope she'll let us try this version this year! We love the smart and cute symbolism that the artist, Colleen Madden, used to illustrate this recipe - "Grannies" for Grannie Smith Apples and "Sweety" little girls for sweet potatoes! The other little details like the apples on Granny's walker and the "snowgranny" are adorable, much like all of the work you can see on Colleen's website - she's such a talented artist!
