One of my favourite salads, serve with grain filled bread or a tasty sourdough. It's like eating a rainbow :).
Varied veggies take a dip in seasoned olive oil and get roasty toasty in a hot oven. Yummy on a cold winters night and any leftovers can be puréed into a tasty chunky soup, just add stock to achieve desired consistency!
