For Edible flowers challenge
I illustrated all the edible flowers that came to my mind to create this little rainbow. I hope, in these difficult times, that it will also be seen as a sign of hope for the future. Greetings to all from Italy.
Pansies are an edible flower! For Pansy Shortbread, bake your favorite shortbread cookie recipe and let cool. Brush each cookie with beaten egg white, and top with a freshly picked, pesticide-free pansy (washed and patted dry). Gently flatten a blossom onto the top of each cookie, brush on a bit more egg white, and sprinkle with sugar. Bake at 325 degrees for 5 more minutes. Welcome Spring!

Edible flowers are everywhere! Some are very familiar, and some are surprising to discover. You might even have some already in your garden without realizing it. Perhaps you'll want to sow seeds and grow your own to add more color and flavor to your cooking!
