I LOVE carrots! They are in season almost all year long, they are cheap, super tasty and easy to prepare. Taste great raw, cooked and fried. Great for main dishes, soups, salads and deserts (carrot cake anybody?) They are rich in antioxidants, vitamin A and B (and many others!). I always have couple of carrots hidden in the fridge - they are lifesavers!
I draw here three easy to prepare carrot dishes but with carrots the list of delicious dishes never ends!
