This is a recipe that I really fell in love with recently. I love the combination of the mint, the lemon, and the buttery flavor of the pine nuts. This recipe is a great side salad to go with a main course or just to eat alone. My children and I started our first garden last summer and included many herbs. I often sent them out to the garden to retrieve mint to go in this salad. Describing to a 7-year old which one is mint from the kitchen window was a humorous endeavor to say the least. I was lucky not to get wads of grass.
