I recently became lactose intolerant and not being able to eat ice cream is hard, real hard. But then the internets told me you can make super creamy ice cream from frozen bananas and the day was saved. I combined it with some mango for extra flavor, and agave syrup for sweetness!
I made a ceviche and stuffed it in an avocado once, which what inspired this idea. I wanted to create a vegetarian appetizer, something a bit less rich than the stuffed avocado recipe and something that could be eaten without a using utensils.
