Helen is my mom, and Lomi Lomi Salmon is one of her signature dishes. We could always look forward to a huge bowl of it at all of our family gatherings. She uses regular tomatoes, but I like to use the heirloom varieties because of their beautiful colors, so this recipe is a melding of her signature dish and my love of art.
Cooking fish doesn't have to be complicated. By cooking it in a foil pouch filled with super tasty ingredients you get bags of flavour and none of the stress. These are five of my favourite fishy flavour combos and will work with any fish.
