I have started a diet that has me in the kitchen cooking meals for myself more than I am use to, and I have found that many of my homemade meals are quite colorful /and/ tasty. Being inspired, I have finally attempted at illustrating one of my recent meals; Avocado Egg Bake.
Most would eat this healthy treat for breakfast, but I have made it both for lunch and dinner as it is very savory and filling.
Hands down this is firm favourite in my house that everyone enjoys. Its super-quick , ever so easy, and very tasty. Guacamole is also nutritious and can be eaten with carrot and cucumber batons instead of tortilla chips. I do go easy on the chilli if my youngest wants to a heap of it, but thats the beauty of this recipe, its almost failsafe.
