My happy meal is the Japanese zaru udon which is a simple summertime dish of icy cold udon noodles traditionally served on a bamboo sieve plate paired with dipping sauce. It is often served with tempura, but it is just as delicious on it's own! :)
A very easy recipe yet very delicious Oyakodon, one of my favorite Japanese Food. Basically you can use any meat or garnish from your refrigerator and just put it in one pan, but soy sauce and mirin is the game changer! so make sure you have one in your kitchen :)

Probably the first dish I attempted to cook when I left home and I still find joy in making it wherever I am even after many years. It reminds me of the times when I was struggling to live on my own for the first time. And despite learning to cook quite a range of dishes now, I still find comfort in this Indian version of scrambled eggs - Egg Bhurji.
Creamy and distinct in flavor, goat cheese is a dairy product enjoyed around the world.
I love this delicious toast! it’s an explosion of flavors with lots of contrast!
1 1/2 tbsp Olive Oil plus some for drizzling
1 Red Onion, roughly sliced
1 tbsp Balsamic Vinegar
1 1/2 tbsp Brown Sugar
100g Goat Cheese, crumbled (feta or blue cheese is good too)
6-8 Thick slices of Fresh Bread (white or brown), toasted
Heat the oil in a pan on a low heat, then add the onions. Continue to cook on a low heat for 5 minutes or so, until the onions are starting to soften. Add the vinegar and sugar and cook (still on a low heat) for another 5-10 minutes, stirring occasionally.
Meanwhile, toast your bread in a toaster or under the grill, then drizzle with olive oil.
When the onions are done, spread evenly on the toast then crumble the cheese over each slice and serve with side salad.

This is my favourite Broccoli recipe . its absolutely delicious and very nutritious too. It uses a few simple ingredients and is very quick to make . its so good that we never have any left overs. The kids call Broccoli as "Little Trees".
I created this with some of my Vietnamese students in mind. Upon critiquing it for me they were very adamant in stating that since it has shrimp, it is disqualified as authentic pho, but they had only accolades for the design. I've made this recipe for my partner and myself several times now, and we both absolutely love it.
