Behind every bad thing, there are good things: due to our having to spend much time at home, our gardens will be abundant, well-kept and gorgeous. In May, my garden produces radishes - colourful, healthy and very easy to grow. Enjoy!
The lead role in this recipe is that of Ljutenitsa. It is likely to be found in the pantry throughout the year. Ljutenitsa is one of my favourite things in the Universe.
It's a bit like salsa made with tomatoes, baked red peppers, aubergines (optional), sunflower oil and spices, cooked on the stove or over open fire in the backyard.
Quick and delicious to make for a week night dinner. This is a staple in my family. A can of black beans, a cucumber and a couple tomatoes chopped up. Combine with cilantro green chilies and lemon juice. Salt to taste and ready to eat. Sometimes I wrap it up in a tortilla along with tandoori chicken for a satisfying crunch!
