This is my go to salad! Although it's got summer in the title, it's yummy all year round! Grab a bag of lettuce, throw in some yummy goat cheese, chop up some fresh strawberries, throw in a few candied walnuts, and finish it off with some balsamic vinaigrette and you're good to go!
My grandma's macaroni salad recipe; a childhood favorite and one I would request whenever I returned from college or studying abroad and still ask for on my birthday. According to my grandma, it's even magical... Legend has it, she once gave the recipe to a young lady who was hoping to get a marriage proposal from her boyfriend. They went on a picnic, she served the salad, and sure enough, he popped the question right then and there.

One of my favorite dishes to make in the summer is a tomato salad with a variety of multicolored tomatoes, sweet bell pepper, and onion. Typically, I don’t really measure the ingredients I just toss everything in a bowl and add more spices and balsamic vinegar as needed. You can add any kind of tomatoes that you like, or try a variety of sweet bell peppers as well. Sometimes I even add feta cheese or fresh mozzarella. I find that this summer salad improves with age as it marinates in the refrigerator!
