Lockdown cooking! April 15, 2020.
In the time when we have limited Supply and need a lot more of comfort food!
Here is a quick recipe for my family's favorite called Lemon chicken! My grandfather makes it for family get-togethers with mint chutney and his mighty glass of whiskey of course!
Here is my take on the same, Simpler and quicker I guess.
Must tell you I only perfected this as a student. It was cheap and quick after a crazy long day!

Done for the Food Geometry Challenge. It's impossible not to think of citrus fruits for this challenge. Make a classic lemonade and add a colorful tropical fruit for flavor, or as a fun garnish. Don't forget to add some mint!
When I was still living in Beirut, I regularly had lunch with my grandmother in her neighbourhood Thai restaurant. We never failed to order the pomelo salad for starters, a great favourite. Eventually the restaurant relocated and, for some reason, dropped the salad from their menu. My grandmother was still thinking longingly of it several years on, so I recreated it as far as I could remember, using ingredients easy to find locally. It was a hit!
Any that is left over will keep a few days while getting even tastier as it marinates further. Make sure to return to room temperature before eating, to fully enjoy the flavours.
Drinking tea is a tradition as much as a favorite past time in Morocco. It is customary to offer mint tea to every guest as a sign of their hospitality. Mint tea is not only refreshing but also good for the body as it is known to relieve stomach problems as well as heartburn in addition to green tea, which is high in antioxidants that lower the risk of cancer.
