Just a super easy, flour-free cookie recipe which just happens to be my favorite to make at a moment’s notice. I sometimes add a packet of oatmeal or a rounded tablespoon of ground flaxseed meal. The cookies come out of the oven soft but then get a little harder and remain easy to bite into and break in two. I like to store them in a cookie tin, but they don’t store for long. These go as fast as they are quick to make!
Growing up in The Netherlands lunch for me meant “toast+peanutbutter”, nothing fancy but so good. Now that I’ve been living in London for a year I realize how “typically dutch” this actually is. I still love my toast with some good old fashioned peanut butter but definitely enjoy other things as well.
A simple but perfect combination of two things that have always gone great together: peanuts and chocolate! Requires the Dutch breakfast staple hagelslag (chocolate sprinkles), but can probably be recreated with chopped chocolate as well.
This recipe has long lived in times when my mom and I wanted something to cure our sweet tooth, but had nothing great to eat on its own or even nothing to bake. Hence the Nothing to Bake No Bake Cookies. It was always such an easy solution to late night movie nights and times when we needed a little comfort! No Bake Cookies is a hug for a foodie like myself. It may be simple, but thats the point. Who wants a hug that you have to wait for. Boil, Mix and enjoy the hug!
I love the peanut butter so much that I decided to make a healthier version, as tasty as the normal one.
I love the natural flavors of the food without oils, sugar and added dressing and this simple recipe was a discovery for me.
Peanuts, like all the trail mix, have their own natural oil and it doesn't need to add anything to get a creamy and delicious result :)
And if that's not enough, the greediest palates can always add a little maple syrup and a pinch of salt... et voilà, a creamy appetite to everybody!
Fave Memory Design Challenge: When I think back to childhood days at the beach I can almost taste the peanut butter and jelly sandwiches mixed with a bit of salty sea and a lot of wind blown sand. My dad would sit in his beach chair on the shore while my brother and I splashed in the waves for hours and hours. We joked that he was guarding our lunch, packed by mom, which almost always consisted of PB&J and orange juice in a thermos. We added the sand ourselves.
This is a Fave Memory of mine. In the weeks before Christmas when I was a kid, my mom would make dozens of these cookies and put them in tins in our chest freezer in the basement so we'd have them for the holidays. My brother and I discovered the stash and used to sneak a handful when we could, hoping she wouldn't notice. I loved those cookies so much, I make them every December with my own kids, with the same old-fashioned aluminum cookie press my mom used decades ago.
