Just a super easy, flour-free cookie recipe which just happens to be my favorite to make at a moment’s notice. I sometimes add a packet of oatmeal or a rounded tablespoon of ground flaxseed meal. The cookies come out of the oven soft but then get a little harder and remain easy to bite into and break in two. I like to store them in a cookie tin, but they don’t store for long. These go as fast as they are quick to make!
