I consider myself lucky to grow up in Thailand where Thai cuisine is one of the best in the world. When I saw this "Rooting for Root Veggies" theme, I was very excited. I have a fond memory of eating many Thai dishes with Asian root vegetables from appetizers, soups, main dishes, snacks, to even desserts! Here is my submission for root v/egetables.
