The result of a quarantine realisation that all it takes is a simple South Indian spice box, a few pulses and garnishes that are staple and almost always available, to make an incredible four course South Indian feast - the elai saapadu (the banana leaf meal), without any compromises in richness of texture, colour, flavour and the variety in them all.
