This is a traditional recipe from the island of Crete. Snails are a very common ingredient in the local cuisine and they are cooked in many different ways. Most Cretans pick the snails on their own from the fields, usually after they rain and keep them alive in a basket feeding them pure food so as their stomachs are totally clean by the time they will be cooked.
