During Tet - the Vietnamese new year, every family has a tray that contains different kinds of traditional sweets to treat the guests. The common sweets are dried fruits, Sugar-coated fruits and vegetables (lotus root, lotus seed, ginger, coconut, tomato, banana,etc), dried seeds (sunflower seed, watermelon seed, pumpkin seed), nuts (pistachio, cashew) and candies (soursop candy, tamarind candy, banana candy, chocolate, Jelly beans, corn candy).
This simple, delicious soup features the sweetness of butternut squash and curry, and the spice of fresh ginger root. A favorite around our house all year round, it is very forgiving in terms of tweaking the amount of each ingredient to taste.
Modified by college students from a Maangchi recipe. Super earthy and hearty and really easy to make if you have doenjang and gochujang, which luckily come in big tubs that last a while.
It's a very accessible recipe if you aren't normally into Korean food (and might make you want to try more!)
