My beautiful daughter Lucie, age 13- enormous brown eyes, whisk broom eyelashes-is an aspiring teenage chef. She developed this version of guacamole. It's minimal in terms of ingredients yet surprisingly delicious.
Seemingly simple, it's the quality of the bread makes this recipe "sing" so buy the best egg bread available. My daughter Lucie demands that I make this dish for her every Saturday morning.
FYI-The "toast" in this illustration is made from model magic clay, hand colored with oil pastel.
My mother made homemade soup every Friday when I was a kid. The smell of the chicken, veggies including the parsley was amazing. It is one of the most powerful memories I have of my childhood. I wanted the feeling in this image to be dream like and evoke the feeling of a memory.
