This traditional comfort chickpeas soup is a worth dish to try in any season, it's fulfilling with vermicelli rice.
For the rise preparation just toast a hand full of vermicelli in 2 tablespoon of butter to golden brown, then add the washed rise and cover it with water, cook on low heat until cooked. Serve warm.
Tabbule, It's a national salad of Syria, is mainly made of chopped parsley, tomato, onion, soaked bulgur and some fresh and dried mint, some people add cucumbers and/or garlic or use quinoa instead of bulgur.
Seasoned with abundant lemon juice, olive oil and salt.
Mutabbal is a grilled eggplant (aubergine) dip, a vegetarian rich flavour with Tahini (sesame paste) and yoghurt, what gives level to this dish is the garlic and olive oil. In my culture we serve it as Meza (appetizer) and we eat it with Arabic or pita bread.
You can enjoy it also by dipping your veggies (carrots - cucumber - celery) in, or with your Nachos.
Muhammara, a classic Mediterranean dish, originally from Aleppo/ Syria
Can be served as a dip with toasted pita, as a spread in sandwiches and wraps or cold with fresh veggies in parties. Adjust the spicing to suit your tastes.
