I L-O-V-E spinach. I add to so many dishes and it's yummy on it's own too. Fresh spinach is great in salads but when it starts to get a bit limp you've just got to cook it!
This is my simplified version of the soup sumo wrestlers eat to put on weight (though it's actually really healthy if not eaten in sumo-sized quantities!!)
