This is the kind of recipe that uses what's left in the pantry at the end of the week to create a tasty dish. Most Italian kitchens have all these ingredients always at hand: olive oil, olives, garlic, capers, anchovies and tomatoes... There are many theories on the origins of the name of the dish, but as I remember, it's just a frugal way to make do with what is available! Global Cuisine

Beans from around the world. A perfect Italian picnic or celebration featuring ingredients from the Emilia-Romagna region in northern Italy: arugula (known as rucola or ruchetta), Proscuitto di Parma, Parmigiano Reggiano as well as a glass of sparkling Italian Lambrusco wine. Buon Appetito!
During the quarantine I have more time to cook so I learned recently to make my own bread. Ingredients like flour, olive oil, salt, yeast, olives, dried tomatoes and spices like rosemary and thyme are always available in my pantry. So this quick and very easy recipe for an original Italian focaccia just became my favourite recipe.

This recipe is illustrated by Sarah (5L) of Mentone Park Primary School with a little help from me getting it on the computer. Our school is very proud of its Kids Cafe and cooking endeavours, as well as our love of art, so we hope you will display our ANZAC recipe even though it was a little bit of a team effort.
