This is an absolute standard recipe in my kitchen, I make it at least once a week. You can combine potatoes with whatever veggies you have - it’s always a great combination of shapes, colors and flavors. Together with a dip and a green salad this is a quick tasty dish.
This is my hummus recipe, if you have never heard about it it is basically a chickpeas sauce that you can do very easily at home with just the help of a food processor. It doesn't require much time, just ten minutes, and can be ideal for days when you got some friends at home and want to nibble something before the main :) or just an excuse to eat some veggie, that is never wrong!

Beets are root vegetables. They provide iron and antioxidants. Small or medium beets are usually more tender than larger ones. This easy Borscht recipe was inspired by my Russian Grandmother Anna. Whenever my brother and I would visit, she always had at least two big pots on the stove. We smelled the delicious aroma of her soups at the end of the hallway! This borscht can be served hot or cold with a spoonful of sour cream or Greek yogurt. In a pinch: If you don't have fresh dill, use 1 teaspoon dried dill instead. Enjoy!
