A simple yet jolly recipe that serves as a Christmas dessert for those times when you spent the entire Christmas Eve cooking and you realize in the evening that you have no more time to prepare the dessert.
This cake makes a perfect X-Mas table dish due to its festive color palette, it is light and perfect after a heavy meal (due to the yogurt). It could also become easily a summer cake (see the tips in my recipe).
And let me tell you a secret: Santa loves it ;)
An easy-peasy chocolate cake for when you have unexpected guests over, you need to bring dessert to an event or you just feel like having something sweet without the hassle of full on baking. This microwave cake will have you up and running in less than 5 minutes of cooking time!
Ok well how exciting can vanilla cupcakes be right? I had to jazz them up somehow. I think everyone needs a nice great basic vanilla cupcake as a good ole standby. Jazz them up with some great buttercream frosting, some fruit, or sprinkles for the kids and viola! You created something special with minimal effort (my kind of baking!)

1. Preheat oven to 175 degrees. Grease a baking dish with oil. Grate the carrots on a fine grater, should have 3 cups.
2. Mix together the eggs, oil, sugar and 2 teaspoons vanilla extract, beat. Then add the flour, cinnamon, baking soda and baking powder. At least add the carrots and nuts.
3. Bake in the oven for 40-50 minutes. Allow to cool before you pull out the cake from the mold.
4. For the cream Mix butter, cream cheese, powdered sugar and vanilla. Beat until the cream. Decorate the cooled cake with cream on top optional add more nuts.
